Buckwheat plant is found to grow best in cool, moist climates. It is usually planted in the spring or is found growing wild. It blooms quite early and yields a dark brown honey of strong and distinct flavor. This honey invokes quite polarized responses. You either love it or you don't like it at all. The rich and dark, almost molassis-like consistency makes it perfect for glazes and salad dressings. To some, it has a hint of dark-chocolate-aftertaste.
